"Cima Genovese" is a typical dish of Ligurian cuisine and especially the city of Genoa. It is a dish of ancient tradition, made up of a stuffed calf pocket of vegetables, meat and cheese, sewn with needle and thread, so that during the long cooking the stuffing does not come out. The difficulty of the preparation lies in this: fill just over half of the pocket with the filling and seal the well opening.
"Cima Genovese" was a dish of recycling and the filling was made up of the slaughter leftovers as brains, sweetbreads and stern. The recipe that we propose provides an easier filling, suitable for today's tastes, but always delicious and tasty: eggs, cheese, peas and sottofesa veal cut into pieces, ranging raw mass, so that during cooking releases its gelatine which will help to compact the top. To make it even easier to prepare recommend that you prepare the veal pocket directly from your butcher. Once cooked the top will cool wrapped tightly in plastic wrap and pressed between two weights.
"Cima Genovese" is ideal to be prepared for big occasions, served in slices like a cooked sausage, it will be the star of the table.
